Baked Fish

  • 1 dressed fish, approx. 5 pounds

  • 1 teaspoon salt

  • 4 tablespoons fat (oil, butter, oleo, lard)

  • 3-4 slices bacon

  • Stuffing: chopped onion, 2 cups bread crumbs, 3 tablespoons oil, herbs of choice, salt, pepper. When mixing stuffing keep on the dry side, just damp enough to hold together.

  • Rub fish inside and out with salt

  • Loosely stuff with dressing and skewer closed

  • In a greased pan, brush fish with 1 tablespoon oil (or melted butter, oleo, fat, lard) and drape with bacon strips

  • Bake in reflector oven at a temperature equivalent to 350 degrees for about 12 minutes per pound of fish.
